Cracker Toffee

This cracker toffee is an easy and decadent treat that is great for holiday baking, or any time!

Over the holiday season my mother-in-law arrived with a tin of Christmas goodies, and her homemade cracker toffee was an instant hit. I couldn't handle all of the glares after I ate the last piece, so I decided to dust off my old recipe and make a batch.

Not only is it easy, it is insanely delicious, it is just a few, simple ingredients. If I make this to bring somewhere I can't make it too far ahead of time or it gets eaten. I like it with dark chocolate chips, but milk chocolate works just as well if that is your preference.

You can use any type of cracker for this, but my two favorites are saltines and club crackers. Ritz crackers work really well, too! We have found saltines are often available in Amish discount stores for less than a dollar, so that is the cracker I use the most often.

How to make cracker toffee

Start by covering a baking sheet with parchment paper, then place rows of crackers until the sheet is covered. You MUST use parchment paper unless you want to jackhammer these off the baking sheet when you are done. Also, make sure you use a baking sheet with sides so the liquid ingredients do not drip off the pan.

Then add the butter and sugar to a saucepan over medium-high heat. Whisk together until it comes to a rolling boil.

Continue whisking for a few minutes as the liquid bubbles and thickens. Continuously stir so it does not burn on the bottom of the pan. Once it has visibly thickened, remove from heat and pour the mixture over the crackers. Be cautious when pouring, the liquid is very hot and feels like molten lava if you drip it on your hand. Don't ask me how I know.

Once the crackers are covered, pop them into a preheated oven at 400º for about 5 minutes. Be careful removing them from the oven because they WILL be hot and liquid-y.

Cracker Toffee

Ingredients  

  • 1 sleeve saltine crackers
  • 1 Cup butter
  • 1 Cup brown sugar
  • 2 Cups chocolate chips

Instructions 

  • Cover a baking sheet with parchment paper, then place rows of crackers until the sheet is covered. Add the butter and sugar to a saucepan over medium-high heat. Whisk together until it comes to a rolling boil. Continue whisking for a few minutes as the liquid bubbles and thickens. Continuously stir. Once it has visibly thickened, remove from heat and pour the mixture over the crackers. Once the crackers are covered, pop them into a preheated oven at 400º for about 5 minutes. Pour chocolate chips over the hot crackers and pop the baking sheet back in the turned-off oven for about 5 minutes until the chocolate chips are melty. Pull the baking sheet out and spread the chocolate evenly over the crackers with a butter knife. Let the whole pan cool. Once it is completely cooled, break it into pieces and store it in a container.
